4 chicken legs and thighs
1-1/2 T. chopped fresh thyme
2 cloves garlic, grated
3 T. olive oil
2 T. lemon juice
1 t. sea salt
Combine thyme, garlic, olive oil, lemon juice, and salt in a small bowl and mix well. Place chicken in a bowl and spoon the mixture over top and bottom of each piece to completely coat the chicken.. Cover and refrigerate for 30 minutes to 3 hours. Brush grill with olive oil and grill chicken over high heat for about 9-10 minutes on each side. Brush any remaining marinade over chicken while grilling. |

5-10 fresh mint leaves
2 T. sugar
3 oz. light rum
Juice of 1 lime, or two key limes
Club soda (or clear soda)
Ice
Tear the mint leaves and put into a highball glass. Add sugar & lime juice – mash leaves with a pestle or a wooden spoon. Fill glass with ice. Add rum and club soda. Stir. Garnish with a sprig of mint and slice of lime. Makes 1 drink. |
